A family-owned winery in the heart of Franciacorta, where wine has been at the centre of our lives for generations. Long before welcoming guests, this estate was our family home—a place where the land has been cultivated, the vineyards carefully tended and our Franciacorta wines crafted from grapes grown exclusively on our own estate.

Surrounded by ten hectares of Chardonnay and Pinot Noir vineyards and set within a historic two-hectare park, Biondelli is a working winery where every season follows the rhythm of the vines. From the hand harvest to vinification, ageing and disgorgement, every stage of production takes place here, combining traditional craftsmanship with modern winemaking technology. Every bottle reflects the character of our vineyards and the passion of the family who continues to care for them.

Since the 1940s, the estate has been the home of the Biondelli family, and today we are proud to share not only our wines, but also the place and traditions from which they are born.

 The Stainless Steel Vinification Area

Our stainless steel vinification area represents the modern and efficient heart of our cellar, where technology and precision support our winemaking philosophy. Equipped with temperature-controlled and compartmentalised stainless steel tanks, this space allows us to carefully manage each stage of the production process while preserving the purity and character of our grapes.

Here, key winemaking operations such as flotation, filtration, cold stabilisation, and the selection, blending and assembly of the base wines for our Franciacorta cuvées take place with the utmost attention to detail. Designed to ensure maximum control and consistency, the facility allows our winemakers to respect the identity of each vineyard parcel and craft wines that faithfully express the unique character of our estate.

 

The Art of Bottling and Disgorgement

All stages of our Franciacorta production take place within our cellar, where tradition, precision and innovation come together to reveal the true character of our wines. Here, every bottle follows a carefully controlled journey, from tirage to the long ageing period on the lees, before reaching the delicate phase of remuage, carried out with the support of the latest-generation automatic gyropallet technology.

Our cellar is equipped to manage every step of the process in-house, including bottling, disgorgement and final labelling. During disgorgement, the sediment accumulated during ageing is gently removed, allowing each bottle to achieve clarity, balance and elegance while preserving the complexity developed over time. Every operation is carried out with meticulous attention by our team, ensuring the highest quality standards for each cuvée.

Once dressed with its final label and ready to leave the cellar, every bottle represents the culmination of our work in the vineyards and the dedication of our family. The final destination is often our direct sales channel, where we have the pleasure of sharing our Franciacorta wines personally with those who appreciate the craftsmanship, patience and passion behind every bottle.

 

The Ageing Cellar

Hidden beneath the estate, our underground ageing cellar is the quiet and essential heart of our Franciacorta production. Built in reinforced concrete using the latest construction techniques, this space was designed with one purpose in mind: to provide the ideal conditions for the long maturation of our wines.

While its beauty lies not in decoration, but in its function, this cellar represents the patience and precision behind every bottle we produce. Thousands of bottles rest here in carefully organised galvanised steel baskets, a practical and efficient system that allows us to optimise space, monitor each individual lot and carefully manage the movement of wines throughout their ageing journey.

Protected from light, temperature fluctuations and external influences, this silent underground environment gives our Franciacorta the time it needs to evolve, develop complexity and express the unique character of our vineyards. It is a place where nothing happens quickly, where patience becomes part of the winemaking process, and where every bottle quietly prepares for the moment it will finally be shared.

 

The Hand-Harvest

The harvest is one of the most important moments of the year at Biondelli, a time when the work carried out in the vineyards throughout the seasons finally reveals its potential. As required by the Franciacorta regulations, all our grapes are harvested exclusively by hand, allowing us to carefully select each bunch and preserve the integrity of the fruit from the very beginning of the winemaking process.

Harvesting always begins with Chardonnay, which naturally reaches maturity before our Pinot Noir. Each vineyard parcel is harvested separately, only when it has reached the perfect balance between ripeness, acidity and freshness. This careful approach allows us to respect the unique character of every plot and preserve the individual expression of each vineyard in our wines.

Every harvest is a balance between nature, precision and patience—a moment when our vineyards begin their journey from grape to Franciacorta.

 

The Press Room

From the vine to the press, every step is designed to be as gentle as possible. Our grapes are collected in small crates that travel directly from the vineyard to the pressing area, avoiding conveyor belts and unnecessary handling. At the eastern end of our vineyard, known as La Nave, a modern unloading hatch allows the crates to be emptied directly into the press room below, where gravity naturally guides the grapes into the cellar.

Inside, a state-of-the-art pneumatic press carries out the delicate extraction of the must. At the centre of a stainless-steel cylinder, a natural rubber membrane gently inflates, pressing the grapes softly against the walls of the chamber to obtain the purest juice while preserving the freshness, elegance and aromatic profile of our fruit. The press can also be inclined during the cycle, allowing the natural separation of the coarser grape particles from the must and improving the efficiency of the operation, reducing processing times while maintaining the utmost respect for the quality of the juice.

Joska & Francesca Biondelli — are undoubtedly the masters of Italy’s prized sparkling wine. I have never been an oenophile but thanks to Joska’s talent in the cellar, I fell in love with the estate’s wine and Satèn has become one of my favorites. Biondelli is a beautiful, historic place and Francesca’s hospitality and savoir-faire can be felt throughout. An interior designer herself, she has expertly designed and restored it with a skillful and unconventional mix & match of different fabrics, patterns and colors.

In 2018, after a meticulous and respectful restoration of our 18th-century estate, we opened the doors of our family home to a small number of guests. Our intention was never to create a traditional hotel, but to offer an authentic vineyard stay where visitors can experience the atmosphere of a working family winery while enjoying every modern comfort.

The estate has been carefully restored to preserve its original character, with historic architecture, original frescoes and period features thoughtfully combined with contemporary amenities. Our 11 suites overlook either the historic park or the surrounding vineyards, while antique furnishings, family heirlooms and carefully selected vintage pieces reflect the authentic spirit of the house.

A stay at Biondelli is an invitation to experience Franciacorta from within the estate itself—hosted by the family who grows the grapes, crafts the wines and continues to call this historic property home.

Enjoy a leisurely light lunch before setting off to explore the rolling vineyards and charming villages of the Franciacorta wine region, or simply spend a relaxing afternoon within the peaceful surroundings of our estate. Sip a glass of our estate-grown Franciacorta beside the historic Lion Fountain, unwind in the shade of our gazebos, or find a quiet corner in the garden where time seems to slow down.

Our seasonal lunch menu celebrates the agricultural heritage of our estate. Most of the ingredients we serve are either produced here on the farm or carefully sourced from neighbouring local producers and artisan farms that share our commitment to quality, authenticity and sustainability. Every dish is designed to pair beautifully with our wines and to offer guests a genuine taste of Franciacorta.

To preserve the intimate atmosphere of the estate and ensure a relaxed, personalised experience, Lunch is reserved exclusively for guests staying at Biondelli Boutique Winery. This allows us to dedicate our full attention to each guest and maintain the tranquil character that makes a stay with us so special.

For generations, the Biondelli family has lived and worked on this historic estate, where wine has always been at the heart of daily life. Following a meticulous and respectful restoration, we chose to open our family home to the public, inviting guests to experience the authentic spirit of our winery from within.

The estate, dating back to 1711, has been carefully restored to preserve its original character while discreetly incorporating every modern comfort. Our aim was to safeguard its identity as a working winery and family home, allowing visitors to experience the atmosphere, traditions and heritage that have shaped Biondelli for generations.

Our 11 individually designed suites overlook either the historic two-hectare park or the estate vineyards. Antique furnishings, carefully selected vintage pieces and contemporary touches complement the architecture of the house, creating spaces that honour its history without compromising comfort.

 

Panoramic Vineyard Pool
23 x 7 meters

Our infinity pool, recently completed on a panoramic terrace above our Pinot Noir vineyards, offers a unique setting to relax while enjoying breathtaking views over the estate and surrounding countryside.

The pool is reserved exclusively for resident guests and is available from check-in until check-out. Access is via a staircase leading up through the vineyard; due to its elevated position, the area is unfortunately not suitable for guests with limited mobility.

A cooler with complimentary water is available inside the Pagoda, where restroom facilities can also be found.

Exclusive Estate Experiences
Private Events & Intimate Celebrations

Biondelli offers the opportunity to experience our historic family winery exclusively for private events, celebrations and corporate gatherings. Surrounded by vineyards and our historic park, guests can enjoy the privacy of the entire estate, including our 11 suites, gardens and the dedicated support of our team.

Whether for an intimate celebration, a private gathering or a memorable weekend with family and friends, Biondelli provides a unique setting where wine, history and the beauty of Franciacorta come together. The estate can accommodate private events of up to 50 guests.

For corporate meetings or team gatherings, our tasting room is available upon request and subject to availability. A quiet, naturally lit space can be arranged for meetings followed by a light lunch or wine experience. High-speed Wi-Fi, TV, water and coffee facilities are available. The room is suitable for groups of up to 10–12 participants.
